Snicker Doodles
2 3/4 Cups Flour
2 Teaspoon Cream of Tartar
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
3/4 Cup Olive Oil, Extra Light 1 1/2 Cups Sugar
2 Eggs, Beaten
2 Teaspoons Cinnamon
2 Tablespoons Sugar
Sift together flour, cream of tartar, baking powder and salt. Mix sugar, eggs and olive oil and gradually add the dry mixture. Chill dough for 6 hours or overnight. Form into small one-inch balls. Roll into a mixture of 2 teaspoons cinnamon and 2 tablespoons sugar. Place two inches apart onto lined cookie sheet. Bake at 400 degrees until lightly browned but still soft, about 8-10 minutes
