NOT-FRIED "FRIED" CHICKEN
1 chicken (3 to 3-1/2 pounds), cut into 10 pieces (cut each
breast in half) and skin removed
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
3 egg whites
1-1/2 cup cornflake crumbs
1/2 teaspoon ground sage
Nonstick cooking spray
1. Preheat oven to 350°F. Coat a rimmed baking sheet with nonstick
cooking spray.
2. In a shallow dish, combine the flour, salt, and pepper.
In a medium bowl, combine the cornflake crumbs and sage.
3. Dip the chicken pieces in the flour mixture, the in the egg whites,
then in the cornflake crumbs, coating completely with each. Place on the
baking sheet. Lightly coat the top of the chicken with nonstick cooking
spray and bake for 45 to 50 minutes, or until no pink remains and the
juices run clear.
