Cheese Cake Everyone Will Love
Crust.
2 cups Graham wafer crumbs
2 Tbsps white granulated sugar.
1/2 cup margarine (melted) 1/4 lb. = 1 square.
1/4 tsp cinnamon.
Filling.
3 - 8 oz. package Philadelphia cream cheese
5 eggs
1 cup sugar
1/4 tsp salt
2 tsps lemon juice
Topping.
2 cups sour cream
2 Tbsps. sugar
Crust.
Melt margarine, add sugar and cinnamon. Add Graham wafer crumbs. Butter very well an 11" spring-form pan. Pour in the crumb mixture and press firmly to from crust. Try to press the crumb mixture up a bit around the sides of your pan about 1/4 in. Set aside.
Filling.
Cream the cheese one package at the time with your mixer. Add eggs one at a time and beat after each. Add surgar, salt and lemon juice. Beat this very well (about 10 -15 min) The success of this cheese cake depends upon the beating for a creamy texture. Pour over the crumb mixture in pan and bake at 350 for about 50 - 60 min. Remover from oven and let stand about 10 - 15 min. to cool slightly.
Topping.
Beat topping mixture well by hand (a wire wisk is good). Pour over cheese cake and return to the oven for and additional 10 min. Cool thoroughly, then refrigerate. Before refrigerating remove the outer rim of the spring-form pan, if you don't do this, condensation will form tiny water droplets on the cake. Serve plain or top with fresh, frozen or canned fruit. Also good with canned pie fillings such as cherry or blueberry, etc....
Looks and taste fabulous. Cut in small wedges, serve.
