Apricot Lemon Sole Flounder
1 egg
1 T water
1/2 c cornflake crumbs
1/4 t salt
1/4 T paprika
1/8 t pepper
4 filets sole or flounder
apricot/lemon sauce
2/3 c Smuckers LOW sugar apricot preserves
1 T lemon juice
1 t dijon mustard
1/2 t grated lemon peel
1/8 t salt
coat baking sheet with non-stick cooking spray
combine: egg and water
combine: all dry ingredients
dip fish first in wet then dry ingredients
arrange on baking sheet,,bake at 425 for 10 min
in a small saucepan combine all sauce ingredients,,heat until bubbly serve with fish
